Yummy Sweet Potato Casserole

YUMMY SWEET POTATO CASSEROLE

Ingredients:
2 Lbs Sweet Potatoes Peeled & Cut into Cubes
¾ Cup Brown Sugar
1 ½ Tsp Salt
¼ Cup Butter (Soft)
½ Tsp Vanilla
½ Cup Chopped Pecans
2 Cups Mini Marshmallows

Directions:
Preheat Oven to 375
Cook potatoes till soft
Place potatoes in a large bowl and mash
Add brown sugar, butter, salt & vanilla – mix well
Fold in ¼ cup pecans
Spread in a greased 9 x 11 dish
Sprinkle with remaining pecans
Top with marshmallows
Bake for 25 minutes at 375
